If you wanted to get a bachelors degree you would look for a university that has a health education and promotion degree. That way you have the technology background and also the ability to act as a liason between the doctors and the patients.
You could get a job as a junior systems or network administrator or technical support. You might be able to get a programming or QA job if you excel in computer programming, but you’ll likely do better in that with a bachelors.

There are a myriad of certification exams one can take with an AA degree in IT. I suppose if it were me, I would go with something that I have either the most interest in or in something that I know a good amount of information about already.

Well, there is quite a difference between bachelors and associates as far as employment goes… not to mention that a lot of people are having trouble finding a job, right now. Especially in the IT and Computer Science fields.
As for certifications… employers generally love any kind of Microsoft of Cisco systems certificates.
